What is soy lecithin?

Lecithin is a food additive that comes from a variety of sources - one of which is soybeans. When added to food, it is often used as an emulsifier or lubricant, but also as an antioxidant and flavor protectant.

Like many food additives, soy lecithin is controversial. Many people believe it carries potential health hazards. However, few, if any, of these claims are supported by concrete evidence.
