Located in the heart of Italy, Poddi Tartufi harvests truffles of fine quality mainly from the region of Umbria. We offer 100% exclusively Italian truffles, as well as wide range of truffle-based products and selected Italian specialties, all produced with respect to the local traditions and conserving artisan methods. To maintain the ‘’Made in Italy’’ quality standards, we use only genuine ingredients without any preservatives, antioxidants or additives.
Poddi Tartufi is a family-run business where traditional family recipes are preserved and revived through modern technologies and carefully controlled production. We constantly work to improve and satisfy our clients’ needs by designing new gastronomical specialties appreciated both in Italy and abroad.
There are numerous interesting beliefs associated with this wonderful tuber of millennial history. Its unique appearance and its mysterious nature, and the fact of being an underground fungus and thus hidden to the human eye, helped the spread of stories and legends since ancient times. Nowadays, truffle is considered one of the most expensive delicacies. Despite of its increasing demand, it is still very difficult to cultivate truffles.
The truffle arises spontaneously in the soil to a depth which varies from 10 to 60 cm, in free zones such as woods and non-cultivated grounds, where it grows in simbiosis among tree roots. The rarity of truffles is related to the fact that very special conditions are needed for its development (among which climate, environment, soil, flora, fauna altitude, ground acidity, humidity etc…).
Traditionally for the truffle hunting it was used the pig, but being fond of truffles, it was difficult to prevent him from eating the precious tubers. In fact currently in Italy for the truffle searching, only dogs are permitted. They are properly trained and have a very fine sense of smell.
To become a truffle seeker one needs to be licensed by an official regional organ. The harvest is regulated by a precise calendar of months and schedules for the search of the different species of truffle.
A real truffle hunter gets up every morning before dawn, walks through the woods with a flashlight and sometimes goes into the evening. Once found the truffle, the seeker with a particular tool (“zappino” or little hoe) extracts it very carefully. Then, in respect of the replaces the soil removed, in respect of nature. For this activity it is necessary a lot of dedication, knowledge of the truffle area and special care with the “teammates”, the truffle dogs.
The aroma of the truffle consists of a range of sensations of varying intensity and amplitude. It is precisely this attractive fragrance that has determined its absolute culinary success.
Although in nature there are many types of truffles in nature, not all are edible. They differ by shape, size, colour, provenance and, of course, aroma. Some are considered the most valuable (and often characterized by a higher price) and other are more related to local culinary traditions.
The storage times are not the same for all types of truffle and to influence its duration is also the size of the piece. Fresh truffles usually should be eaten within a few days, but they can be stored longer if cooked or even frozen.
However it is always a product of nature, seasonal, available in very limited quantities and variable from year to year.
