Fish protein concentrate (FPC) is designed to recover valuable nutrients from fish meat as an affordable, acceptable and high-quality protein source. This article reviews the existing solvent extraction FPC preparation processes. Influential operating parameters should be selected to obtain the highest FPC yield and excellent functional properties.
