Azo red is a monoazo dye in the form of red powder or granules. It is mainly 4-hydroxy-3-(4-sulfonyl-1-naphthylazo)-1-naphthalenesulfonic acid disodium salt and auxiliary pigments as well as sodium chloride and/or sodium sulfate as the main colorless components . This can be converted to the corresponding aluminum lake.

Azorubine (INS No. 122) may be added to foods and beverages at concentrations up to the Maximum Permissible Level (MPL) specified by the Codex Alimentarius Commission. Codex Alimentarius Commission Regulations. The General Standard for Food Additives currently has 7 food categories that adopt the MPL of azo red. Numerous other applications for azo red (Carmo Red) as a color additive in food and beverages have been proposed and await adoption upon completion of the review and comment process.
