It is a fungicide and bactericide mainly used in processing fruits and vegetables. It acts as a bactericide, antibacterial and plasticizer. It is pyran-2,4-dione and ketone.
A secondary ingredient that helps extend the shelf life of a product, also known as a preservative. It mainly acts on fungi and is milder on bacteria.

Industrially, dehydroacetic acid has a variety of uses, including:
- As a fungicide and bactericide. The sodium salt (sodium dehydroacetate) is often used instead of dehydroacetic acid because of its greater solubility in water.
- As a plasticizer for synthetic resins.
- As an anti-enzyme in toothpaste.
- As a precursor of dimethyl-4-pyridone. These compounds are synthesized when dehydroacetic acid is exposed to aqueous solutions containing primary amines.
