- 4 slices rye or sourdough bread
- 100g fresh cream
- 150g hot smoked salmon
- some capers
- 1 pickled gherkin, chopped
- squeeze lemon juice
- ½ teaspoon chopped chives
- 8-10 organic primulas (primula vulgaris) or other edible flowers
Method Step 1 Toast the bread and spread with fresh cream. Place the smoked salmon on top and garnish with capers, gherkins and lemon juice. Season, then sprinkle with chopped chives and evening primrose flowers (see tip, below).
