柑橘姜醃菜

Raw materials

  • 2 cups water, add more as needed

  • 2 cups Citrus Ginger Apple Cider Vinegar

  • 4 teaspoons salt

  • 2 teaspoons sugar

  • 1 piece of ginger, peeled and thinly sliced

  • 5 cups of vegetables such as cucumbers, carrots, asparagus, red onions, and cauliflower

  1. Stir first 6 ingredients in a medium saucepan. Simmer until salt and sugar dissolve
  2. Put vegetables into clean glass jars. Fill jars with salt water (add water if necessary to complete filling).
  3. Seal jar and refrigerate. Let the vegetables marinate for at least 4 hours.
