Origin:
the sodium salt of citric acid, a compound that exists in every organism because it is in all body cells Part of a key metabolic pathway. Large concentrations are found in citrus fruits, kiwi, strawberries and many other fruits. Commercially prepared by fermenting molasses with Aspergillus niger.
Functions and characteristics:
Citric acid and citrate have many functions-they can increase the activity of many antioxidants and show certain antioxidant activity. They are mainly used as acidity regulators and aromatic compounds. They increase the gel strength of jams and reduce enzymatic browning in fruits and fruit products.

Side effects:
Citric acid is a normal component of human cells and will be degraded and utilized by the human body without side effects. Pseudo-allergic reactions (intolerance) have been reported, but they are very rare. People with this intolerance should also avoid all soft fruits and berries and their products. It does not cause cancer (see question below).
Control your diet:
Citric acid and citrate are generally available for all religious groups, vegans and vegetarians. Citric acid does not cause allergic reactions in people who are allergic to oranges and other citrus fruits because it is made from sugar instead of fruit.
