Boneless chicken breasts are browned, then topped with your favorite BBQ sauce, bacon, and pepper jack cheese and baked.
This is a delicious and easy recipe that's sure to please! Serve chicken with rice and tossed green salad or potato salad and baked beans.

Material:
- 4 strips of bacon
- 4 boneless skinless chicken breasts
- 4 tablespoons all-purpose flour
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/2 clove garlic
- 4 tablespoons thick barbecue sauce
- 4 slices pepper jack cheese
- Salt, optional, to taste
- Freshly ground black pepper, optional, to taste
- Paprika, optional, to taste
- Fresh cilantro, chopped, for garnish
Production steps:
- Grease a baking sheet and set aside. Heat oven to 375 degrees Fahrenheit.
- Fry or grill the bacon until almost crispy. Remove to paper towels to drain. Cook the bacon the day before and refrigerate to speed up preparation time.
- Pat chicken dry. Place chicken breast halves between plastic wrap and pounds so that they are evenly thick, about 1/4 to 1/2 inch. Repeat with remaining chicken breasts. Dredge in flour to coat thoroughly.
- In a large skillet over medium heat, melt butter with olive oil. Add half the garlic and stir in butter mixture. Remove the garlic after about 30 seconds and discard.
- Add chicken to skillet and cook until cooked through, about 5 minutes per side. It should register 165˚F on an instant-read thermometer.
- Place chicken breasts in baking dish. Spread about 1 tablespoon of the thick barbecue sauce on each chicken breast half. Top with a slice or two of bacon. Cut the bacon in half to cover the chicken. Place a slice of pepper jack cheese on top of the bacon.
- Grill chicken until cheese is melted, about 5 to 6 minutes.
- If desired, sprinkle with cilantro before serving.

hint:
- If you are baking the bacon in step 2 (instead of frying it), line a large baking pan or baking sheet with foil. Then place a cooling or grill rack in the pan. Place bacon slices on rack. Bake at 375 degrees F for about 25 to 30 minutes, or until the bacon is as crispy as you like.
