- Season salmon steaks with salt and pepper.
- Heat oil in a large skillet over medium-high heat. When the oil is hot, add the salmon steaks and fry on one side until golden brown and caramelized, about 3 minutes. Carefully turn steak over and cook for 3 minutes more. Remove and blot dry on paper towels.
- Drizzle each salmon steak with about 2 tablespoons chive vinaigrette. Serve immediately.
