Use peach or apricot preserves as the glaze for these spicy chicken wings.

Material:
- 3 cloves garlic
- (3-inch) slices of peeled ginger, roughly chopped
- 2/3 cup peach or apricot preserves or jam
- 1/3 cup soy sauce
- 2 tablespoons water
- 1/4 teaspoon hot red pepper flakes
- 4 pounds chicken wings, tips removed if desired
Production steps:
- Preheat chicken.
- Place the garlic in a food processor and chop finely. Add ginger and chop finely.
- Add the preserves, soy sauce, water and red pepper flakes and stir until the sauce is combined.
- Line the bottom and sides of a large 4-sided pan with foil and lightly oiled foil.
- Pat wings dry and add to pan. Season with 3/4 teaspoon salt. Pour sauce over wings and toss to coat, then spread in 1 layer.
- Grill wings 4 to 6 inches and heat through for 5 minutes, then flip and baste with sauce from pan. Continue roasting, rotating the pan and roasting 3 more times, until the chicken is cooked through and browned, 20 to 25 minutes.
