桃漆雞翼

Use peach or apricot preserves as the glaze for these spicy chicken wings.

Cooking time: 35 minutes Serves: 4–6

Material:

  • 3 cloves garlic
  • (3-inch) slices of peeled ginger, roughly chopped
  • 2/3 cup peach or apricot preserves or jam
  • 1/3 cup soy sauce
  • 2 tablespoons water
  • 1/4 teaspoon hot red pepper flakes
  • 4 pounds chicken wings, tips removed if desired

Production steps:

  1. Preheat chicken.
  2. Place the garlic in a food processor and chop finely. Add ginger and chop finely.
  3. Add the preserves, soy sauce, water and red pepper flakes and stir until the sauce is combined.
  4. Line the bottom and sides of a large 4-sided pan with foil and lightly oiled foil.
  5. Pat wings dry and add to pan. Season with 3/4 teaspoon salt. Pour sauce over wings and toss to coat, then spread in 1 layer.
  6. Grill wings 4 to 6 inches and heat through for 5 minutes, then flip and baste with sauce from pan. Continue roasting, rotating the pan and roasting 3 more times, until the chicken is cooked through and browned, 20 to 25 minutes.
