Lime juice, garlic, and cilantro flavor these easy-to-grill chicken breasts. We used boneless chicken breasts in this recipe, but you could use chicken nuggets or even boneless chicken breasts. Depending on the size and thickness of the chicken breasts, be sure to reduce the deboning time to about 20 to 25 minutes. This marinade would also be excellent on grilled chicken fillets or whole legs.

Material:
- 4 bone-in chicken breasts
- 1/4 cup vegetable oil
- 1/4 cup fresh cilantro, chopped
- 3 cloves garlic, minced
- 1 1/2 tablespoons lime juice
- 2 teaspoons grated lime zest, from 1 lime
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper

Production steps:
- Place chicken in a large resealable plastic food storage bag or lidded container. Combine vegetable oil, cilantro, garlic, lime juice and zest, salt and pepper. Pour mixture into bag or container and cover chicken thoroughly; cover container or seal bag. Refrigerate for about 2 to 4 hours to marinate, turning occasionally.
- Preheat the oven to 375°F (190°C/Gas 5). Line a 13 x 9 x 2-inch baking pan or rimmed baking sheet with aluminum foil and spray lightly with nonstick cooking spray.
- Place the chicken, skin side up, in a baking dish.
- Bake for 40 to 50 minutes, or until the chicken registers at least 165 F/73.9 C on an instant-read thermometer, which is the lowest safe temperature for chicken and other poultry products.

Recipe variations:
- For grilled marinated boneless chicken breasts, place chicken breasts between pieces of plastic wrap and lightly pound until even thickness. Marinate the chicken as directed and prepare the grill for medium-high heat, or about 400 degrees Fahrenheit. Cook chicken over direct heat for about 12 minutes, turning frequently, or until chicken reaches at least 165 degrees F (73.9 degrees C) in a flash - read thermometer.
- Use lemon zest and juice instead of lime zest and juice, and parsley instead of cilantro.
