This is an easy mozzarella chicken recipe. Chicken breasts are cooked in butter and grilled with mushrooms and cheese. Material:
- 4 boneless chicken breasts
- 1/4 cup all-purpose flour
- 3 tablespoons unsalted butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces sliced mushrooms
- 4 slices mozzarella cheese
- 1 cup rice
- 8 ounces cooked pasta
Production steps:
- Pound chicken breasts in half until evenly thin. Dredge chicken with flour.
- In a large skillet, heat 2 tablespoons butter over medium heat. Cook chicken in butter until tender and cooked through, about 4 to 6 minutes per side.
- Remove chicken to shallow baking dish; sprinkle lightly with salt and pepper.
- Add 1 tablespoon butter to the pan and sauté the mushrooms until soft.
- Top each piece of chicken with sliced mushrooms; cover with a slice of cheese. Arrange the remaining mushrooms around the chicken.
- Place chicken breasts under hot broiler until cheese melts.
- Serve immediately with hot buttered pasta or rice.
