Cook salmon filets in a cast-iron grill pan and enjoy your favorite chargrilled flavor without having to step outside.

Material:
- 5 ounces center-cut salmon fillet (about 1 inch thick), skin on
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper
Production steps:
- Bring salmon fillets to room temperature 20 minutes before grilling.
- Preheat oven to 450 degrees Fahrenheit. Preheat a large cast-iron baking pan over low heat for 1 minute.
- Meanwhile, lightly brush salmon fillets with oil and season with salt and pepper.
- Increase heat under grill pan to medium-high. Place the salmon fillets, skin side up, on the grill at an angle to the ridges of the pan. Cook until fish has visible grill marks, about 3 minutes. To make the crosshatch grill marks, use a spatula to reposition the salmon fillet about 45 degrees (keeping the skin side up). Cook for another 2 minutes. Flip the salmon fillets over and transfer the baking sheet to the oven. Continue in the oven for 2 to 3 minutes for pink inside, 5 for medium, and 7 for done.
- Remove fish from pan and let sit for 2 minutes to finish cooking. (If the skin loosens during cooking, you can remove and discard before serving if desired.)
