Material:
Chicken wings:
- 2 pounds chicken wings
- 2 teaspoons vegetable oil
- 1/2 teaspoon kosher salt
- 1/4 cup sugar
- 1/2 medium garlic clove, finely minced
- 1/4 cup fish sauce
- 1-2 jalapeño or serrano peppers, stemmed, seeded and chopped
- 1/2 cup chopped roasted peanuts
- 3 tablespoons chopped fresh cilantro

Make chicken wings:
- Preheat oven to 500°F. Place wire rack inside large rimmed baking sheet. Place chicken wings, oil and salt in a large bowl. Place chicken wings in a single layer on rack and bake until golden, crispy, and cooked through, about 30 minutes.
Make the syrup:
- Heat a small saucepan over medium heat. Spread a thin layer of sugar in the pan, let it melt, then add another layer (no need to stir). Repeat until all the sugar has melted and turned into syrup. Cook the syrup, undisturbed, until it turns dark amber and smells nutty, 2-3 minutes. Remove from heat and slowly add garlic and fish sauce (it may spatter); stir until smooth.
- Place cooked chicken wings in a large bowl and toss with glaze. Add jalapenos, peanuts and cilantro, stir well and serve.
