Material:
-
3 pounds boneless chicken breasts
-
1 teaspoon kosher salt
-
1/4 teaspoon black pepper
-
1 1/2 cups chicken broth
-
2 cloves garlic
-
1 bay leaf
-
6 sprigs fresh herbs
Production steps:
- Pat chicken breasts dry with paper towels. Sprinkle the chicken breasts with salt and pepper and place them in the pressure cooker. Add chicken broth, garlic, bay leaf and herbs, if using.
- Secure the pressure cooker lid and turn the pressure release knob to the sealing position. Select pressure cooking or manual, high pressure, and set the timer for 7 minutes. It takes about 10 minutes to build pressure and start cooking.
- When the time is up, allow it to release naturally for 5 minutes, then carefully turn the knob to the exhaust position to release the remaining pressure.
- Transfer the chicken breasts to a plate or cutting board and let rest for 5 minutes. Slice or shred the chicken, then strain the broth to use as a sauce or save it for use in other recipes.
- Serve the chicken as a main dish, serving rice or noodles and some broth on a plate with a side dish or salad. Sprinkle with paprika or drizzle with soy sauce to add a little color to the chicken.
hint:
- How to cook frozen chicken breasts: Make sure the chicken breasts are separated; if they stick together, they won't cook evenly. If necessary, thaw them slightly and dry them thoroughly. Add the chicken breasts to the pan and follow the instructions above, but set the timer for 11 minutes (10 minutes for 6 ounces, 12 minutes for 10 ounces). Let the pressure release naturally for 5 minutes.
- How to freeze cooked chicken: Place cooked chicken in an airtight freezer bag or container and freeze for up to three months. Thaw cooked chicken in the refrigerator and use within 24 hours.
- How to shred cooked chicken breasts: Transfer the chicken breasts to a bowl with a little broth and shred them using an electric mixer or two forks. Use shredded chicken in salads or sandwiches.
