Sodium citrate is used as an acidity regulator in foods and beverages, and also as an emulsifier for oils. They melt the cheese without being greasy. It can also reduce the acidity of food. Sodium citrate is used to prevent donated blood from clotting during storage. It is also used in laboratories to determine whether a person's blood is too thick and may cause thrombosis, or whether the blood is too thin to operate safely before surgery. Sodium citrate is used in medicine as an alkalizing agent instead of sodium bicarbonate to neutralize excess acid in blood and urine. It can be used to treat metabolic acidosis and chronic kidney disease.
